Las recomendaciones nutricionales para personas con diabetes tipo 2 siguen reforzando la importancia de una alimentaci\u00f3n basada en ingredientes frescos, de bajo \u00edndice gluc\u00e9mico, y adaptada a las estaciones.<\/p>\n<p data-start=\"696\" data-end=\"1151\">La buena noticia es que tanto la calabaza como la zanahoria, dos joyas del huerto veraniego, pueden formar parte de una alimentaci\u00f3n saludable para personas con diabetes. Si bien ambas contienen az\u00facares naturales, su alto contenido en fibra, vitaminas antioxidantes y agua, ayuda a regular su absorci\u00f3n y mejorar la respuesta gluc\u00e9mica, sobre todo cuando se cocinan al dente y se combinan con una fuente de grasa saludable y prote\u00ednas, como haremos aqu\u00ed.<\/p>\n<p data-start=\"1153\" data-end=\"1345\">Adem\u00e1s, esta receta es una forma excelente de introducir verduras de forma atractiva, reconfortante y gourmet, perfecta para una comida ligera de verano o una cena que se puede tomar templada.<\/p>\n<p>Por eso, hoy proponemos una receta que combina sencillez, textura cremosa y un perfil nutricional ideal para mantener la glucosa a raya sin renunciar al placer del buen comer:<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\"> \t<link itemprop=\"image\" href=\"http:\/\/www.solucionesparaladiabetes.com\/magazine-diabetes\/wp-content\/uploads\/Risotto-de-calabaza-y-zanahoria.png\" \/>\n<div class=\"item ERName\">Risotto de calabaza y zanahoria<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Redacci\u00f3n<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">160 g de arroz integral o arroz arborio (si se desea una textura m\u00e1s cl\u00e1sica)<\/li>\n<li class=\"ingredient\">300 g de calabaza pelada y troceada en dados peque\u00f1os<\/li>\n<li class=\"ingredient\">1 zanahoria mediana rallada o picada muy fina<\/li>\n<li class=\"ingredient\">\u00bd cebolla morada o cebolleta (m\u00e1s digestiva en verano)<\/li>\n<li class=\"ingredient\">1 cucharada de aceite de oliva virgen extra<\/li>\n<li class=\"ingredient\">600 ml de caldo vegetal sin sal (mejor casero)<\/li>\n<li class=\"ingredient\">1 cucharadita de c\u00farcuma o jengibre fresco rallado (opcional)<\/li>\n<li class=\"ingredient\">Pimienta negra y nuez moscada al gusto<\/li>\n<li class=\"ingredient\">1 cucharada de levadura nutricional o parmesano rallado (opcional, para dar cremosidad)<\/li>\n<li class=\"ingredient\">Perejil fresco picado para decorar<\/li>\n<li class=\"ingredient\">Un pu\u00f1ado de nueces o pipas de calabaza tostadas (para dar textura y grasas saludables)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Sofrito suave y digestivo:<\/li>\n<li class=\"instruction\">En una sart\u00e9n grande, calienta el aceite de oliva y sofr\u00ede la cebolla picada finamente a fuego medio durante 5-7 minutos, hasta que est\u00e9 transparente. A\u00f1ade la zanahoria rallada y saltea un par de minutos m\u00e1s.<\/li>\n<li class=\"instruction\">La calabaza como protagonista:<\/li>\n<li class=\"instruction\">Incorpora la calabaza en dados peque\u00f1os y cocina otros 5 minutos. A\u00f1ade la c\u00farcuma o jengibre si decides usarlos: ambos son antiinflamatorios naturales y aportan un toque ex\u00f3tico sin afectar negativamente la glucemia.<\/li>\n<li class=\"instruction\">El arroz entra en juego:<\/li>\n<li class=\"instruction\">A\u00f1ade el arroz y rehoga durante 2-3 minutos para que se impregne bien. Comienza a incorporar el caldo poco a poco, removiendo constantemente y esperando a que se absorba antes de a\u00f1adir m\u00e1s l\u00edquido.<\/li>\n<li class=\"instruction\">Textura cremosa sin nata ni mantequilla:<\/li>\n<li class=\"instruction\">A medida que el arroz se va cocinando (unos 20-25 minutos), ver\u00e1s c\u00f3mo la mezcla se vuelve cremosa gracias al almid\u00f3n del arroz y a la textura fundente de la calabaza.
